How do I resume an app? I remember there was an option for this in the service setting but I can’t seem to find it anymore. Was this removed, is so is there a way to resume my application?
You should have a big blue banner telling you that the service is paused and that you can resume it.
Otherwise, it’s in the “Danger Zone” of your service settings.

How would you unpause an app now that there is a new interface?

It is not possible to resume an app from the new interface of the control panel, you need to resume every service inside it one by one.
But it’s a good idea, we’ll probably add an option to resume an app from the home page when it’s paused.
